This is kind of a Slovakian Bread and butter pudding. It’s a sweet pudding made from Apples or pears and white bread steeped in sweetened milk, spices and eggs. You can also use  a combination of apples and pears.

Ingredients. Serves four.

400ml whole milk

125 gms unsalted butter

3 apples, or 3 pears or a mixture. (Peeled, cored and sliced, keep fresh in a bowl of water that contains a squeeze of lemon juice.)

100gms soft brown sugar

3 eggs

2 teaspoons cinnamon

1 teaspoon Vanilla extract

1/2 a large loaf, can be sliced, can be a bit stale

75 gms raisons

100ml cold tea

1 teaspoon freshly grated nutmeg

1 tbs brown sugar crystals


Firstly, put the raisons in a dish to soak in the cold tea. In a saucepan warm the milk and heat the butter until it has melted. Leave it to cool down to lukewarm.

In a bowl add the eggs, sugar, cinnamon, nutmeg and Vanilla, beat until well combined then whisk in the buttery milk.

Tear the bread, crusts on or off it depends how posh you are, and layer it into a greased baking dish. Strain and discard the excess tea off the raisons and scatter the raisons onto the bread. Top with the sliced apples/ and or Pears.

Pour over the batter. Sprinkle on the brown sugar crystals.

Place in a, 180 degree Celsius, pre heated oven and bake until set and a golden crust has formed on the top, serve with the usual ice cream or custard, or try with sour cream.
