Hairy recipe: Ham and pea fritters
60g plain flour
1 tsp baking powder
2 tbsp milk
300g frozen peas
100g cooked ham
Run the peas under hot water to defrost. Bring a kettle of hot water to the boil, then pour into a small saucepan. Add the peas, return to the boil and cook for 2 minutes. Drain the peas, then roughly puree them – you want a mixture of whole and crushed peas here.
Put the plain flour in a large bowl with the baking powder. Season with salt and pepper. Make a well in the flour and break in the eggs. Break up the eggs with a fork and start working in the flour from the sides until it is all amalgamated. Add the milk and whisk to make sure you have a smooth batter.
Stir in the peas and ham.
Heat a large, shallow frying pan and spritz with low cal oil spray. Add tablespoons of the batter well spaced out over the frying pan – you should be able to do around 5 at a time. Cook for 2-3 minutes until well browned underneath, then flip and cook the other side.
Keep warm whilst you cook the remaining fritters.
