HAIRY cakes, not Fairy cakes! - Sticky Date Cake
This is slightly bonkers but true. A lady came up to me in the supermarket and said "try this it's brilliant!". She gave me the recipe and said ta ta. This cake is odd but brilliant, fabulous on our posh picnic.
110 Gms raisins
225 gms chopped dates
175 gms Sultanas
110 gms currents
275 gms butter
275 ml Water
400 gm tin condensed milk
150 gms wholemeal flour
150 gms plain flour
pinch of salt
scant teaspoon bicarb of soda
1 heaped tbs chunky marmalade
Need 20 cm square cake tin
Place the raisins, dates, Sultanas and currents into a saucepan together with the butter, water and condensed milk. Bring this to the boil, stirring frequently to avoid sticking. Simmer for 3 minutes.
Now transfer this mixture to a mixing bowl and allow to cool.
Meanwhile in another bowl mix the wholemeal and the plain flours with the salt and bicarb.
Fold the cooled fruit mixture into the flour. Add the marmalade. Spoon into the greased and lined cake tin.
Bake in a moderate pre heated 170 degree oven for about 2 and 1/2 hours. You will need to protect the top of the cake with a double piece of baking parchment.
Let it cool in the tin for 10 minutes before turning it out onto a cooling rack.
This is a great cake that lasts for ages.
