Bikers on a Budget Recipe: Bacon Jam
500g smoked streaky bacon, finely diced
2 medium onions, very finely chopped
3 garlic cloves, finely chopped
A sprig of thyme, left whole
75ml cider vinegar
75g soft light brown sugar
50ml maple syrup
100ml strong coffee – not instant
1 tbsp chipotle paste, or a teaspoon of chilli powder
Put the bacon in a large saucepan and saute on a medium heat until starting to crisp and brown. Add the onion and continue to cook until the onion has softened and looking slightly caramelised. Add the garlic and thyme and cook for a further minute or two.
Add the cider vinegar, sugar, maple syrup, coffee and Bourbon to the saucepan. Cook on a low heat, stirring constantly to dissolve the sugar, then simmer gently for around an hour, until the mixture is thick and syrupy.
Using a stick blender if you have one, blend the jam roughly – a couple of very short whirrs of the blade should do it as you still want plenty of texture in there. Stir again to mix.
Transfer to a clean, sterilised jar. This will keep in the fridge for up to a month. Best on hot buttered toast, but is also very good in a roly poly – do a half portion of the sweet/savoury suet roll recipe and spread thickly with the bacon jam.
